Technical specification
What is the moisture content of prunes?
Moisture affects texture, weight, storage and packaging choice. The standard provides an upper limit, while the target value and tolerance for specific goods are agreed in the specification.

Direct answer
What is the maximum moisture content for prunes?
UNECE DDP-07, last revised in 2025, states that prunes must not exceed 40.0 per cent moisture. This is the standard ceiling, not a target or proof for specific goods; the actual batch value must be stated in the specification and supported by an appropriate test.

What the standard sets and what the buyer agrees
The standard ceiling does not replace a product specification. Buyer and supplier still need to agree target moisture, tolerance, preservation method, packaging and the declared shelf life of the product.
| Item | Reference value | Application |
|---|---|---|
| UNECE DDP-07 maximum | 40.0% | Upper limit in the 2025 standard |
| Target batch moisture | To be agreed | Stated with tolerance in the quote/specification |
| Preservation method | Product-specific | The standard allows preservatives or other means such as pasteurisation |
| Measurement method | UNECE Method 1 and/or 2 | The laboratory reference method applies in case of dispute |
| SANFRUT batch value | Not publicly confirmed | Published only with a valid specification or analysis |
Direct answer
Can shelf life be determined from moisture alone?
No. Moisture is important, but shelf life must be confirmed for the specific recipe, preservation process, packaging and storage conditions. This website therefore does not publish one universal number of months; the valid shelf life belongs in the specification and label of the specific product.

What sets shelf life and how goods are stored
The date on the label assumes the prescribed storage conditions. If goods are held warmer or damper than specified, the declared shelf life no longer applies regardless of initial quality.
| Factor | Effect on shelf life |
|---|---|
| Product moisture | Must remain within the agreed range throughout shelf life |
| Preservation method | Preservative, pasteurisation or another validated process changes product conditions |
| Storage temperature and humidity | Must match the declared storage conditions |
| Packaging | Barrier properties and closure affect moisture exchange and product protection |
| Light and odours | Product should be protected according to the declared conditions |
| Validation | Shelf life is set for the specific product, not copied from a generic table |
