Prune calibres
What 40/50 means, how it is measured, and why the European and US systems describe different fruit sizes for the same number.
Technical parameters
The specification is the document goods are produced, accepted and claimed against. Every parameter in it carries a consequence for price, shelf life and channel fit.

Direct answer
A specification covers calibre, moisture, pitting, quality class, tolerances, packaging and the documentation required by the destination market. Calibre and moisture are the parameters that most often differ between offers, which is why two seemingly equal prices are frequently not comparable.
Decision data
The table lists each parameter and the standard that governs it. Values for a specific batch are confirmed in the specification accompanying a quotation, not published in advance.
| Parameter | What it determines | Reference |
|---|---|---|
| Calibre | Fruit size and intended use | UNECE DDP-07, count per 500 g |
| Moisture | Texture, weight and shelf life | Natural condition up to 21 %, rehydrated 25–31 % |
| Pitting | Processing, classes and application | Whole: one class; pitted: two classes |
| Uniformity | Consistency across a consignment | Tolerances set by the standard |
| SO₂ | Colour, shelf life and allergen labelling | EU maximum 150 mg/kg; above 10 mg/kg must be declared |
| Packaging | Logistics and sales channel | Bulk carton, sack, big bag or retail format |
| Documentation | Market acceptance | Analyses and certificates per destination country |
In detail
Each parameter has its own page explaining the standard, the reference tables and what it means for your sourcing decision.

Permitted moisture ranges by product type and how moisture sets shelf life and storage conditions.
Differences in processing, moisture and quality classes, and which format suits which sales channel.
Sulphur dioxide, European Union limits, allergen labelling and the documents accompanying a shipment.
